Pasta Sauce
Serves 4
Ingredients
750gm can crushed tomato
50 gm butter
1 onion
1/4 bunch fresh thyme
2 garlic cloves
1/2 bunch fresh basil
Sugar
Salt
1 Cup white wine
Method
- Finely dice onion and gently shred garlic cloves
- Pick leaves of thyme stalks
- Cook onions in a hot pan until transparent with garlic and thyme leaves. Add butter
- Deglaze with 1 cup of white wine and cook until wine is reduced by 3/4
- Add tomato, bring to boil then reduce to simmer for 45 minutes
- Once cooked turn off heat then add basil leaves, sugar & salt to taste
