Pasta Dough
Serves 4
Ingredients
3 Egg yolks
2 Whole eggs
20ml Olive oil
100ml warm water
750gm Plain flour
Season to taste
Method
- In a bowl combine flour, eggs, oil and seasoning
- Rub together until mixture resembles bread crumbs
- Add warm water, small amounts at a time and kneed until form and smooth
- Wrap dough and place in fridge to rest for approximately 45 minutes
- Roll as per needed.
Rolling pasta is tricky; a pasta roller is a great way to roll it out. Starting from the largest width and working slowly down to a thinner width. A number 2 on the pasta roller is usually a good width.
Cook in a big pot, rapid boiling salted water for 4 to 5 minutes, drain and serve immediately.
